| What comes to mind when you think of ostriches? Big,
awkward, bug-eyed birds that stick their heads in the sand? Exotic, endangered
creatures that live somewhere in Africa? Or maybe cute, funny zoo animals
that prance around, eat grass, and lay really big eggs?
Guess what? Ostriches don’t stick their heads in the sand. And for cute, they spit at you if you look them in the eye. Kicking is their major means of defense. Some birds also peck and bite when threatened. |

| You think they’re rare and exotic? Actually, ostriches belong to the ratite family of birds, a family that includes all species of flightless birds, including the emus and kiwis. Sure, ostriches live in Africa, but they also live all over the United States and there are plenty of them—-over 2 million strong. | |

Awkward? Don’t bet on it. Ostrich have excellent
eye sight, large external ear canals, powerful legs which allow speeds
of 40 mph for up to thirty minutes at a time (the second fastest animal
in the world!), and males can weight up to 300 lbs. Yikes.
Grass eaters? Sure, they eat some straw, but ostriches also enjoy a variety of fruits, not to mention a delectable insect and lizard now and then. |
| O.K., ostriches do lay really big eggs, and lots of them. In captivity, females may lay as many as 100 eggs in a season, although 20 to 40 are more common. Eggs are whitish in color, weigh about 3 pounds and are generally laid every other day. | |
| So maybe you don’t know as much about ostriches as you think. And maybe you don’t care. After all, what’s so important about ostriches? | |
| JUST THAT THEY ARE THE HOTTEST NEW BURGER TO HIT OUR DINNER TABLES IN THE LAST FIFTY YEARS! | |

| Oh, yeah, we almost forgot. Ostriches are used to make purses,
cosmetics, dusters and costumes (from ostrich feathers), and decorations
(from ostrich eggshells). Ostriches aren’t just the food of a new generation,
but they are the bird of a new generation.
